Celeriac is a root vegetable that is, not surprisingly, related to celery. It has a gnarled, beige appearance which can sometimes be deceiving. Celeriac has a rich texture with an extraordinary flavour similar to celery. Once diced into small pieces, it is similar in appearance to potato.

Celeriac is very low in kilojoules and is a source of vitamin B.

Choose celeriac that is firm and heavy. The best celeriac is pale green to cream coloured. The smoother the skin, the easier celeriac is to peel and prepare.

Store in a plastic bag in the refrigerator. If your celeriac has stalks, trim these and keep the root.

Celeriac can be treated just like potatoes or turnips. It can be mashed, grated, boiled or served raw in salads. It also makes great wedges and a magnificent soup!
