Pear - Prickly (Indian figs)
Prickly pears are the egg-size fruit of the prickly pear cactus, and have been a staple food of native Americans for many centuries. The garnet-coloured flesh contains many tiny seeds which are best removed. Prickly pears contain fibrous pectin, which some studies have shown helps to lower cholesterol levels.

Available from December to May.
Serving suggestion
Prickly pears are particularly delicious eaten chilled and are a thirst quencher. The versatile prickly pear can be used to make refreshing juices, purées, salad dressings, or sauces for entrées or desserts. Prickly pears are also often made into jam or marmalade.
Did you know?
The flavour of the prickly pear has been described as unique, with a taste similar to raspberry and watermelon, yet slightly bitter.
