Eggplant
This beautiful vegetable, with its deep purple skin, is also known as an aubergine. Although it originally came from China, it is synonymous with the Mediterranean diet. Eggplants are a good source of dietary fibre, they are fat and salt free and are low in kilojoules.

Serving suggestion
Eggplant is the perfect vegetarian substitute for meat. It is extremely versatile and is delicious stuffed and baked, grilled with a marinade or served in dips or sauces. To draw out the flavour, slice, sprinkle with salt and let stand for a while. Wash off salt and then pan fry, grill or barbecue.
Did you know?
The eggplant is closely related to the capsicum and like the capsicum, it is actually a fruit.
