Shallots
Shallots have edible hollow tube-like leaves and white bulbs. They are sometimes referred to as eschalots, spring onions or scallions. Shallots are members of the allium family which contains more than 300 species including leeks, garlic, spring onions and chives.

Shallots are an excellent source of vitamin C and the green stems provide beta carotene.
Serving suggestions
Shallots are tasty chopped finely in salads and on sandwiches, tossed through omelettes or scrambled eggs, mixed into mashed potato or used in stir-fries and soups.
