Fennel
Fennel is an unusual looking, white, bulbous vegetable with green stems. The bulb itself has a crunchy texture. Fennel is a good source of dietary fibre and vitamin C and the leaves are rich in vitamin A.
Seasonality
Available from April to September.
Serving suggestion
Fennel can be eaten raw in salads or boiled, baked, steamed, stir-fried or microwaved until tender. Substitute fennel for celery or onion.
Did you know?
Both the bulb and the green feathery leaves of fennel can be eaten. The leaves have a much stronger taste usually described as similar to mild licorice.
