Parsnip
Parsnips are similar in size and shape to a large carrot to which they are related. These root vegetables have creamy white skin, a green leafy top and a sweet, nutty flavour.
Seasonality
Available from January to December.
Serving suggestion
Parsnips can be peeled lengthways into ribbons, then deep-fried as a snack or garnish, dry baked unpeeled as wedges or chips or baked until golden and served with roast meats.
Did you know?
Much of the parsnip's flavour is found under the skin which is why many recipes call for them to remain unpeeled.
