Almond and Garlic Greens

  • 300 grams Baby Brussels Sprouts, halved
  • 1 Broccolini®, bunch, into 5cm lengths
  • 2 garlic cloves, crushed
  • 2 tbsp extra virgin olive oil
  • 100 grams slivered almonds
  • 1/2 lemon, juiced
  • 2 tbsp finely chopped fresh parsley
  • 1/4 tsp Salt and freshly ground black pepper
  1. Microwave or steam the vegetables for 2 minutes or until just tender. Drain well. Set aside.
  2. Heat the oil in a large frying pan over medium heat. Add almonds and garlic and cook, stirring often, for 3 minutes or until almonds are golden.
  3. Add the greens to the pan and cook, tossing for 2 minutes or until heated through.
  4. Remove pan from heat and add the lemon juice, parsley, salt and pepper. Toss well to combine. Serve immediately.
