  • 20 Grape Tomatoes
  • 20 * 18 cm wooden skewers
  • 1/2 cup plain flour
  • 1 ltr vegetable oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp ground black pepper
  • 1/2 tsp salt
  • 75 grams plain flour
  • 15 grams dried yeast
  • 1 tsp Cajun spices
  • 1/2 tsp caster sugar
  • 1/4 tsp salt, pinch
  • 30 ml bourbon
  • 100 ml soda water
  1. For Cajun spices, combine all ingredients.
  2. For batter, combine flour, yeast, spices, sugar, salt and bourbon and mix well. Add soda water and whisk briefly. Stand in a warm spot for 2 hours. Batter should foam and be well risen.
  3. Heat vegetable oil in a saucepan until hot.
  4. Place grape tomatoes on the end of the skewers, dust in flour then dip in batter. Drain well. Immerse tomato in hot oil until golden, drain on paper towel and roll in remaining Cajun spices.
