CALYPSO® MANGO CHUTNEY

  • 4 Calypso® Mangoes, peeled and chopped roughly
  • 165ml white wine vinegar
  • 100g brown sugar
  • 1 onion
  • 4 cloves garlic
  • 1 tsp ground ginger
  • 1 star anise
  • 1 red chilli, deseeded
  • pinch of salt
  • Julienne peel of 1 orange
  • juice of 1 lime
  1. In a large pot bring all ingredients, except lime juice and mangoes, to a boil and reduce liquid by half.
  2. Add mangoes and lime and cook for a further 5-10 minutes until the consistency is thick and syrupy.
  3. Pour into a sterilized jar and cap. Turn jar upside down in the sink and leave for 10 minutes.
  4. Turn back over and allow to cool on the bench overnight.
Tip: Can be stored for up to 3 month
