  • 1 large Calypso® Mangoes, de-cheeked & cubed
  • 2 super thick slices fresh white bread
  • 100g low fat Greek natural yoghurt
  • 2 tbs maple syrup
  • 3 large eggs, lightly beaten
  • canola oil spray
  1. Spray a large non-stick frying pan lightly with canola oil and heat.
  2. Dip each slice of bread in the lightly beaten egg mixture until both sides are coated.
  3. Cook the slices on a medium to high heat in the frying pan until lightly golden.
  4. Serve each slice drizzled in maple syrup and topped with Calypso® mango cubes & a dollop of Greek natural yoghurt.
