CALYPSO® MANGO FRENCH TOAST
- 1 large Calypso® Mangoes, de-cheeked & cubed
- 2 super thick slices fresh white bread
- 100g low fat Greek natural yoghurt
- 2 tbs maple syrup
- 3 large eggs, lightly beaten
- canola oil spray
- Spray a large non-stick frying pan lightly with canola oil and heat.
- Dip each slice of bread in the lightly beaten egg mixture until both sides are coated.
- Cook the slices on a medium to high heat in the frying pan until lightly golden.
- Serve each slice drizzled in maple syrup and topped with Calypso® mango cubes & a dollop of Greek natural yoghurt.
