  • 2 large Calypso® Mangoes, peeled and sliced
  • 3/4kg cooked prawns
  • 1 cup Macadamias, roasted, salted, crushed into large chunks
  • 1 bag fresh baby spinach leaves

Dressing

  • 1/4 cup lemon juice,
  • 2 tbsp light olive oil,
  • 1 tbsp fresh chopped basil,
  • pinch of freshly ground black pepper,
  1. Combine the dressing ingredients into a lidded jar and shake.
  2. Layer baby spinach leaves, prawns and Calyspo® mango slices onto 4 large plates.
  3. Drizzle with lemon basil dressing.
  4. Sprinkle with crushed macadamias to serve.
