  • 6 Minicaps® baby capsicums, yellow
  • 6 Minicaps® baby capsicums, orange
  • 6 Minicaps® baby capsicums, red
  • 150 grams cream cheese
  • 8 black olives, seeded
  • 1 tsp chopped basil
  • 150 cream cheese
  • 1 red chilli
  • 1 lemon Juice
  • 150 grams cream cheese
  • 100 grams cooked beetroot
  1. Laying each of the Minicaps® on their sides, slice off the top quarter and scrape out any seeds. Discard.
  2. For each of the fillings, place all ingredients in a food processor and blend until smooth.
  3. Place olive cream cheese filling in a piping bag and pipe into red capsicums.
  4. Place chilli lemon cream cheese filling in a piping bag and pipe into yellow capsicums.
  5. Place beetroot cream cheese filling in a piping bag and pipe into orange capsicums.
  6. Assemble around a platter to serve.
