FRESH PERFECTION BERRY ICE POPS

  • 125g Perfection Blueberries
  • 125g Perfection Raspberries
  • 410ml (12/3 cups) raspberry apple juice
  • 125ml (1/2 cup) coconut water
  1. Combine the blueberries and raspberries in a bowl. Half fill 12 x 80ml (1/3 cup) popsicle molds carefully with berries. Combine the juice and coconut water in a jug. Pour into each mold, so it almost covers the berries. Freeze for 30 minutes or until partially frozen.
  2. Insert a paddle-pop stick into the centre of each mold. Add the remaining berries then fill with remaining juice. Freeze for 6 hours or overnight if time permits.
  3. Remove from the molds and serve immediately.
Tip: You can replace the raspberries with a second 125g punnet of Perfection blueberries when fresh Perfection raspberries are not available.
