  • 2 punnets Tomato Medley, larger tomatoes to be halved
  • 2 Kumato® Tomatoes, thinly sliced
  • 1 punnet Romatherapy® Baby Roma Tomatoes, halved lengthwise
  • 1 large avocado, chopped
  • 1 bunch basil, leaves removed
  • 3 tbs extra virgin olive oil
  • 3 tbs basil pesto
  • 200g bocconcini, drained, halved
  • pecorino, finely grated, optional
  1. In a large glass bowl, layer half the medley tomatoes in the base. Top with avocado and scatter over handful basil. Season with salt and pepper and drizzle over 1 tablespoon oil.
  2. Spoon pesto over the medley tomatoes. Top with baby roma tomatoes, bocconcini and handful basil leaves.  Season and drizzle with 1 tablespoon oil. Top with Kumatoes® and remaining medley tomatoes. Season and drizzle with remaining oil. Cover and refrigerate 1 hour to allow flavours to develop.
  1. Just before serving scatter over few small basil leaves and pecorino.
