  • 12 Qukes® Baby Cucumbers
  • to garnish Microherbs
  • 1/3 cup tinned or fresh cooked beetroot, finely diced
  • 1 cup diced cooked chicken breast
  • 1/4 cup firm ricotta cheese
  • 1 tsp Italian parsley, chopped
  • 1 tsp lemon juice
  • 1 tsp sea salt
  • 1/2 tsp ground white pepper
  1. For filling, place all ingredients except Qukes® and microherbs in a bowl and mix well.
  2. Cut ends from Qukes® and cut in half on the diagonal. Use a short, fine bladed knife to hollow out the centres.
  3. Fill the cavity with beetroot mix. Garnish with microherbs.
