Ruby Red Chicken-Filled Qukes® Baby Cucumbers
- 12 Qukes® Baby Cucumbers
- to garnish Microherbs
- 1/3 cup tinned or fresh cooked beetroot, finely diced
- 1 cup diced cooked chicken breast
- 1/4 cup firm ricotta cheese
- 1 tsp Italian parsley, chopped
- 1 tsp lemon juice
- 1 tsp sea salt
- 1/2 tsp ground white pepper
- For filling, place all ingredients except Qukes® and microherbs in a bowl and mix well.
- Cut ends from Qukes® and cut in half on the diagonal. Use a short, fine bladed knife to hollow out the centres.
- Fill the cavity with beetroot mix. Garnish with microherbs.
