Baby Cos Lettuce Heart Salt and Pepper Squid Cups

  • 4 Baby Cos Heart
  • 4 Baby Red Cos Heart
  • 50 ml sweet soy sauce
  • 1 tsp wasabi paste
  • 4 tsp sweet chilli sauce
  • 200 grams fresh squid cleaned, tube sliced finely, tentacles whole
  • 3 tsp rice flour
  • 1 cup Oil, for frying
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/ tsp ground white pepper
  • 1/2 tsp ground Szechwan pepper
  • 1/2 tsp Chinese 5 Spice powder
  • 1/2 tsp lemon pepper
  1. Garnish plates with soy sauce, wasabi and sweet chilli sauce.
  2. Place lettuce leaves on plates.
  3. For salt and pepper spice mix, combine all ingredients.
  4. Heat oil till hot. Dust squid in flour and fry till golden. Drain.
  5. Season squid with salt and pepper spice mix.
  6. Fill lettuce leaves with squid and serve.
