BBQ Chicken Fillets with Salad and Grape Slaw
The sweetness of grapes balances the tenderness of the chicken in this dish.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 6-8 minutes.
Ingredients
Salad
- 250g baby red capsicums, deseeded and sliced
- 1/2 iceberg lettuce, or 2 Sweet Hearts™ baby iceberg lettuce, finely sliced
- 1 medium carrot, grated
- 125g Qukes® baby snacking cucumbers, diced
- 2 cups seedless grapes, cut in half (use a mixture of colours such asThompson seedless, Midnight Beauty® seedless black, Menindee)
- 1/2 cup parsley, chopped
- 1/2 - 3/4 cup Italian dressing
Chicken
- 4 x 150g skinless chicken fillet breasts, thickly sliced
- 1/2 cup plain Greek yoghurt
- 2 tbsp store bought roasted capsicum tapenade
Cooking Instructions
- Place sliced chicken pieces into a non metallic bowl and combine with yoghurt and tapenade. If time permits, leave to marinate for a few hours for flavours to develop.
- In a medium bowl, combine lettuce, baby red capsicums, carrot, Qukes® baby snacking cucumbers, grapes, and parsley.
- To cook chicken, heat a BBQ grill or chargrill pan over medium heat.
- Spray with oil spray and cook each side for 3-4 minutes or until chicken is cooked.
- Gently mix chicken, salad and dressing, serve straight away.
