BBQ Mustard Marinated Steaks with Diced Vegetable Salsa
A deliciously different way to present a BBQ favourite!
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 6-8 minutes.
Ingredients
Vegetable Salsa
- 250g Qukes® baby snacking cucumbers, diced
- 200g punnet The Original™ grape tomatoes, cut into quarters
- 175g pkt Vine Sweet Mini Caps® baby capsicums, diced
- 3/4 cup flat leaf parsley
- 1 tsp lime zest
- 1 1/2 tbsp lime juice
- 1/3 cup olive oil
- 1 Sweet Gems™ baby cos lettuce heart, torn (optional)
Steak
- 4 beef Porterhouse steaks
- 2 tbsp wholegrain mustard
- 2 cloves garlic, crushed
- 1/3 cup olive oil
- Freshly ground black pepper
Cooking Instructions
- In a non metallic bowl, marinate the meat in the combined mustard, garlic, olive oil and ground pepper. If time permits allow to marinate for a few hours.
- Meanwhile, mix Qukes® baby snacking cucumbers, The Original™ grape tomatoes, Vine Sweet Mini Caps®, parsley leaves, zest, juice and olive oil into a medium sized bowl. Season to taste with salt and pepper. Allow to sit while steaks are cooking.
- Preheat BBQ grill plate or chargrill pan on medium heat.
- Spray steaks lightly with spray oil and cook steaks for 3 minutes on each side or until cooked to your liking, turning steaks only once.
- To serve, place Sweet Gems™ baby cos heart onto serving plate and serve steak on top. Generously top with vegetable salsa and any salad juices.
