Buttermilk Pancakes with Fresh Mango, Maple Syrup and Yoghurt
An indulgent, totally sublime way to start a relaxing Sunday, or, as a special treat, any day at all!
Serves 4.
Prep Time: 20 minutes.
Cooking Time: 10 minutes.
Ingredients
- 2 mangoes (use Kensington Pride or Pearl mangoes)
- 1 1/2 cups self raising flour
- 1/4 cup sugar
- 1 egg
- 1 tbsp vegetable oil
- 400ml buttermilk
- Maple syrup and yoghurt to serve
Cooking Instructions
- Mix first 5 ingredients in a bowl with a whisk until smooth
- Heat a medium frypan to hot on a low heat.
- Cook pancakes in butter or margarine until golden on each side.
- Peel and slice mangoes.
- Serve hot pancakes with sliced mango, maple syrup and yoghurt.
