Buttermilk Pancakes with Fresh Mango, Maple Syrup and Yoghurt

 

An indulgent, totally sublime way to start a relaxing Sunday, or, as a special treat, any day at all!

 

Serves 4.
Prep Time: 20 minutes.
Cooking Time: 10 minutes.

 

Ingredients

  • 2 mangoes (use Kensington Pride or Pearl mangoes)
  • 1 1/2 cups self raising flour
  • 1/4 cup sugar
  • 1 egg
  • 1 tbsp vegetable oil
  • 400ml buttermilk
  • Maple syrup and yoghurt to serve

Cooking Instructions

  • Mix first 5 ingredients in a bowl with a whisk until  smooth
  • Heat a medium frypan to hot on a low heat.
  • Cook pancakes in butter or margarine until golden on each side.
  • Peel and slice mangoes.
  • Serve hot pancakes with sliced mango, maple syrup and yoghurt.
