Bethonga Gold Pineapple, Coconut and Macadamia Muffins
These muffins are fluffy, light, and with the tropical taste of Bethonga Gold pineapple - something you'll want to enjoy more than once!
Serves 6-8.
Prep Time: 10 minutes.
Cooking Time: 20-25 minutes.
Ingredients
- 1 cup Bethonga Gold pineapple, roughly chopped
- 2 cups self-raising flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1 egg
- 1/4 cup vegetable oil
- 1 cup milk
- 1/4 cup macadamia nuts
- 3 tbsp desiccated coconut
Cooking Instructions
- Lightly whisk together egg, sugar, milk and oil.
- Add pineapple, nuts and coconut.
- Stir in flour and baking powder and mix together.
- Lightly grease a muffin tin and fill each 3/4 way with batter.
- Bake in 200°C oven for 20-25 minutes.
- Remove from the oven and sit for 5 minutes. Serve warm.
