Bethonga Gold Pineapple, Coconut and Macadamia Muffins

 

These muffins are fluffy, light, and with the tropical taste of Bethonga Gold pineapple - something you'll want to enjoy more than once!

 

Serves 6-8.
Prep Time: 10 minutes.
Cooking Time: 20-25 minutes.

 

Ingredients

  • 1 cup Bethonga Gold pineapple, roughly chopped
  • 2 cups self-raising flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 1/4 cup macadamia nuts
  • 3 tbsp desiccated coconut

Cooking Instructions

  • Lightly whisk together egg, sugar, milk and oil.
  • Add pineapple, nuts and coconut.
  • Stir in flour and baking powder and mix together.
  • Lightly grease a muffin tin and fill each 3/4 way with batter.
  • Bake in 200°C oven for 20-25 minutes.
  • Remove from the oven and sit for 5 minutes. Serve warm.
