
Chocolate Mousse with Royal Pom® Pomegranate and Mint
A combination of heavenly flavours.

Ingredients

5 tbsp fresh Royal Pom® pomegranate juice

Royal Pom® pomegranate arils to garnish

2tbsp cold water

7g unflavoured gelatin

1/4 cup water, boiling
-
1/2 cup cocoa powder, dark

1 cup sugar
-
2 cups whipping cream, heavy

Mint leaves, fresh
Cooking Instructions
- To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. One large Royal Pom® pomegranate will produce about 1/2 cup of juice.
- Pour the cold water into a small bowl. Pour in the gelatin. Meanwhile, bring 1/4 cup water to a boil. Pour it into the bowl and stir to dissolve the gelatin completely.
- In a medium bowl, whisk together the cocoa powder and sugar. Pour in the whipping cream. Beat on medium speed until stiff peaks form. Pour in the gelatin mixture and pomegranate juice and beat until well-blended.
- Place some fresh pomegranate arils into the bottom of the serving glasses.
- Spoon the mousse mixture on top of the pomegranate arils inside the serving glasses and refrigerate at least 30 minutes before serving.
- Garnish with fresh pomegranate arils, and fresh mint.
