Mango and Peach Crumble with Mascarpone Cream
Warm a cool winter's evening with this special dessert, featuring the tropical taste of mango!
Serves 4.
Prep Time: 20 minutes.
Cooking Time: 45 minutes.
Ingredients
- 3 large mangoes, peeled and chopped into rough cubes (use Kensington Pride or Pearl mangoes)
- 6 ripe peaches, peeled and chopped
- 2 tbsp caster sugar
- 1 cinnamon stick
- Mascarpone cream
Crumble
- 1 1/2 cups plain flour
- 1/2 cup brown sugar
- 1 tbsp shredded coconut
- 1/2 cup chopped hazelnuts
- 1 tsp ground ginger
- 150g butter, cold, cut into small pieces
Cooking Instructions
- Mix mangoes, peaches, caster sugar and cinnamon stick and place in a medium sized buttered oven dish.
- Combine crumble ingredients by rubbing together with hands until crumbly.
- Sprinkle topping evenly over fruit.
- Bake in a moderate hot oven for 45 minutes or until top is golden brown.
- Serve with mascarpone cream.
