Mango and Peach Crumble with Mascarpone Cream

 

Warm a cool winter's evening with this special dessert, featuring the tropical taste of mango!

 

Serves 4.
Prep Time: 20 minutes.
Cooking Time: 45 minutes.

 

Ingredients

  • 3 large mangoes, peeled and chopped into rough cubes (use Kensington Pride or Pearl mangoes)
  • 6 ripe peaches, peeled and chopped
  • 2 tbsp caster sugar
  • 1 cinnamon stick
  • Mascarpone cream

 Crumble

  • 1 1/2 cups plain flour
  • 1/2 cup brown sugar
  • 1 tbsp shredded coconut
  • 1/2 cup chopped hazelnuts
  • 1 tsp ground ginger
  • 150g butter, cold, cut into small pieces

Cooking Instructions

  • Mix mangoes, peaches, caster sugar and cinnamon stick and place in a medium sized buttered oven dish.
  • Combine crumble ingredients by rubbing together with hands until crumbly.
  • Sprinkle topping evenly over fruit.
  • Bake in a moderate hot oven for 45 minutes or until top is golden brown.
  • Serve with mascarpone cream.
