Mango Rice Pudding Brulée

Mango Rice Pudding Brulée

 

A traditional favourite, this rice pudding takes on a wonderful, exotic flavour with a touch of mango!

 

Serves 4.
Prep Time: 20 minutes.
Cooking Time: 35 minutes.

 

Ingredients

  • 3/4 cup puréed mango (use Kensington Pride or Pearl mangoes)
  • 1/2 cup arborio rice
  • 1/2 cup caster sugar
  • 1 1/2 cups cream
  • 1 1/2 cups milk
  • 1 tsp vanilla
  • 1 egg, lightly beaten

Cooking Instructions

  • Cook the rice, sugar, milk, cream and vanilla over low heat in a medium sized heavy based saucepan, stirring occasionally, for 35 minutes or until rice is al dente.
  • Remove from heat, stir in egg and mango purée.
  • Pour into serving dishes.
  • Serve with fresh mango.
