Mango Rice Pudding Brulée
A traditional favourite, this rice pudding takes on a wonderful, exotic flavour with a touch of mango!
Serves 4.
Prep Time: 20 minutes.
Cooking Time: 35 minutes.
Ingredients
- 3/4 cup puréed mango (use Kensington Pride or Pearl mangoes)
- 1/2 cup arborio rice
- 1/2 cup caster sugar
- 1 1/2 cups cream
- 1 1/2 cups milk
- 1 tsp vanilla
- 1 egg, lightly beaten
Cooking Instructions
- Cook the rice, sugar, milk, cream and vanilla over low heat in a medium sized heavy based saucepan, stirring occasionally, for 35 minutes or until rice is al dente.
- Remove from heat, stir in egg and mango purée.
- Pour into serving dishes.
- Serve with fresh mango.
