Pearl Mango and Lime Sorbet

Pearl Mango and Lime Sorbet

 

Mango and lime are the ideal partners in this easy to prepare sorbet. The perfect palate cleanser.

 

Makes 2 litres.
Prep Time: 30 minutes.

 

Preparation Only

 

Ingredients

  • 5-6 large Pearl mangoes (2kg flesh)
  • 400ml water
  • 500ml sugar
  • 200ml lime juice

Preparation Instructions

  • Dice Pearl mangoes and place in a small pot.
  • Add the sugar and water.
  • Bring to a simmer and stir for 10 minutes, ensuring that the sugar is dissolved.
  • Place the mixture in a blender, add lime juice while blending.
  • Pour mixture into a container and freeze.
