Peppered Pineapple with Vanilla Ice Cream

Peppered Pineapple with Vanilla Ice Cream

 

The intense, sweet flavour of Bethonga Gold pineapples is the focal point of this hearty dessert.

 

Serves 4-6.
Prep Time: 15 minutes.
Cooking Time: 5-7 minutes.

 

Ingredients

  • 1 Bethonga Gold pineapple, peeled and cut into 1 inch slices with core removed
  • Freshly ground black pepper
  • 100g sugar
  • 20ml lemon juice
  • 50ml orange juice
  • 70g unsalted butter
  • 50ml brandy
  • Vanilla ice cream

Cooking Instructions

  • Sprinkle pepper over pineapple slices.
  • Heat butter in a pan, add pineapple and flame with brandy.
  • Add both juices and sugar and cook on low heat until golden brown.
  • Place pineapple slices on plates and arrange a scoop of ice cream in the middle.
  • Drizzle remaining syrup over ice cream and serve.
