Peppered Pineapple with Vanilla Ice Cream
The intense, sweet flavour of Bethonga Gold pineapples is the focal point of this hearty dessert.
Serves 4-6.
Prep Time: 15 minutes.
Cooking Time: 5-7 minutes.
Ingredients
- 1 Bethonga Gold pineapple, peeled and cut into 1 inch slices with core removed
- Freshly ground black pepper
- 100g sugar
- 20ml lemon juice
- 50ml orange juice
- 70g unsalted butter
- 50ml brandy
- Vanilla ice cream
Cooking Instructions
- Sprinkle pepper over pineapple slices.
- Heat butter in a pan, add pineapple and flame with brandy.
- Add both juices and sugar and cook on low heat until golden brown.
- Place pineapple slices on plates and arrange a scoop of ice cream in the middle.
- Drizzle remaining syrup over ice cream and serve.
