Royal Pom® Pomegranate and Fresh Fruit Compote with La Bella Figura® Figs

 

A decadent combination of luscious fruits and berries.

 

Serves: 4.
Prep Time: 5 minutes.
Cooking Time: 20 minutes.

 

Ingredients

  • 150ml fresh Royal Pom® pomegranate juice
  • Arils from 1 large Royal Pom® pomegranate
  • 1/4 cup caster sugar
  • 125ml water
  • 200g fresh blueberries
  • 200g fresh raspberries
  • 1 La Bella Figura® fig, quartered

Cooking Instructions

  • To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. One large Royal Pom® pomegranate will produce about 1/2 cup of juice.
  • Place the pomegranate juice, sugar, and water in a medium saucepan. Stir over medium-low heat until the sugar dissolves.
  • Increase heat to high and bring to the boil. Reduce heat to medium and simmer, uncovered, for 15 minutes or until the mixture is thick and syrupy.
  • To remove pomegranate arils use a sharp knife, cut off the pomegranate crown, then cut the pomegranate into even sections. Immerse the sections in a bowl of cold water and gently roll out the arils with your fingers or a spoon. Discard everything else and strain the water.
  • Stir in the blueberries, pomegranate arils and raspberries and cook for 1-2 minutes or until the berries soften slightly.
  • Place into serving bowls and top with fresh fig quarters.
