Grape and Prosciutto Crostini
These crostini make an elegant party appetiser before a Mediterranean-style meal. Recipe courtesy California Table Grapes.
Serves 12
Prep Time: 5 minutes.
Cooking Time: 20 minutes.
Ingredients
- 1 baguette, sliced into 10-15mm slices
- 4 tbsp extra virgin olive oil
- 1 1/2 cups fresh California grapes
- 1 bunch basil
- 120g soft goat's cheese
- 6 slices prosciutto
- 1 tbsp balsamic vinegar
- Pepper to taste
Cooking Instructions
- Preheat oven to 160°C.
- Lightly brush 12 slices of baguette with olive oil and lay them directly on the middle rack of the oven. Toast for 5 minutes, or until light golden brown.
- Put remaining olive oil in a small sauté pan and warm on medium-high for a few minutes.
- Add the grapes and sauté for 5 minutes or until soft and warmed through. Remove from heat.
- Top each baguette with one leaf of basil and spread goat's cheese evenly among the toasted slices.
- Cut each slice of prosciutto in half and drape over the cheese.
- Sprinkle balsamic vinegar over the grapes and add few grinds of pepper.
- Top each of the baguettes with three grapes.
- May be served warm or made in advance and served at room temperature.
