Taste Buddies® Flat Peaches with Macadamia Nut and Vanilla Praline
A decadently different way to enjoy fresh peaches.
Serves: 12.
Prep Time: 10 minutes.
Cooking Time: 5-7 minutes plus 30 minutes' setting time.
Ingredients
- 6 Taste Buddies® flat peaches
- 1 cup white sugar
- 1/2 cup water
- 100g raw macadamia nuts, roughly chopped
- 1 vanilla bean
- 150ml thickened cream, whipped
- Fresh mint leaves to garnish
Cooking Instructions
- Halve peaches and remove seeds.
- Combine sugar and water in a pan and boil until caramelised, approx 2 minutes.
- Pour praline mix onto a tray and sprinkle with chopped macadamias. Set at room temperature, approx 30 minutes.
- When set, break praline into pieces and place in food processor. Process until mix resembles fine sand.
- Scrape seeds out of vanilla bean and, with food processor motor running, add to praline.
- Spoon praline into peach cavities.
- Top with a dollop of thickened cream and fresh mint leaf.
Tip: Praline can be transported in a ziplock bag and prepared elsewhere. Store leftover praline in the freezer.
