Taste Buddies® Flat Peaches with Macadamia Nut and Vanilla Praline

 

A decadently different way to enjoy fresh peaches.

 

Serves: 12.
Prep Time: 10 minutes.
Cooking Time: 5-7 minutes plus 30 minutes' setting time.

 

Ingredients

  • 6 Taste Buddies® flat peaches
  • 1 cup white sugar
  • 1/2 cup water
  • 100g raw macadamia nuts, roughly chopped
  • 1 vanilla bean
  • 150ml thickened cream, whipped
  • Fresh mint leaves to garnish

Cooking Instructions

  • Halve peaches and remove seeds.
  • Combine sugar and water in a pan and boil until caramelised, approx 2 minutes.
  • Pour praline mix onto a tray and sprinkle with chopped macadamias. Set at room temperature, approx 30 minutes.
  • When set, break praline into pieces and place in food processor. Process until mix resembles fine sand.
  • Scrape seeds out of vanilla bean and, with food processor motor running, add to praline.
  • Spoon praline into peach cavities.
  • Top with a dollop of thickened cream and fresh mint leaf.

Tip:  Praline can be transported in a ziplock bag and prepared elsewhere. Store leftover praline in the freezer.
