Baby Wombok San Choy Bow

Baby Wombok San Choy Bow

 

Crisp and cleansing, the wombok perfectly envelopes the spicy stuffing in this Asian classic.

 

Serves 4.
Prep Time: 25 minutes.
Cooking Time: 15 minutes.

 

Ingredients

  • 1 baby wombok
  • 150g brown onion, diced
  • 1 clove garlic, purée
  • 15g shallots, sliced
  • 125g bean sprouts
  • 1 tbsp vegetable oil
  • 50g ginger, purée
  • 300g pork mince
  • 300g chicken mince
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 200g fried noodle

Cooking Instructions

  • Heat oil in wok or saucepan and cook onions, garlic and ginger until onion is transparent.
  • Add mince and cook until slight brown.
  • Combine sauces and simmer for 1 minute.
  • Turn down heat, add sprouts and sliced shallots.
  • Place baby wombok leaves on plate, put fried noodles inside each leaf and add mixture on top of noodles.
