Bethonga Beef Tacos with Bethonga Gold Pineapple

 

This recipe was created especially by Andrew Mirosch, executive chef, Sirromet Winery, Brisbane.

 

Serves: 6.
Prep Time: 15 minutes.
Cooking Time: 20 minutes.

 

Ingredients

  • 1 1/2 cups Bethonga Gold pineapple, diced into 1cm cubes
  • 1 iceberg lettuce, shredded
  • 2 cups fresh tomatoes, diced
  • 30ml vegetable oil
  • 500g premium Bethonga Beef mince
  • 1 packet taco seasoning mix
  • 1 jar taco salsa
  • 12 taco shells
  • 1 cup cheddar cheese, grated
  • 1 cup lite sour cream

Cooking Instructions

  • Heat oil and fry Bethonga Beef mince over high heat until browned. Add seasoning, salsa and 1 cup tomatoes and cook for 10 minutes.
  • Add 1 cup pineapple pieces and remove from heat. Keep warm.
  • Heat tacos according to manufacturer's instructions.
  • Fill taco shells with beef, lettuce, remaining tomato and pineapple, and cheese and top with a dollop of sour cream.
