Bethonga Beef Tacos with Bethonga Gold Pineapple

Serves: 6.
Prep Time: 15 minutes.
Cooking Time: 20 minutes.
Ingredients
- 1 1/2 cups Bethonga Gold pineapple, diced into 1cm cubes
- 1 iceberg lettuce, shredded
- 2 cups fresh tomatoes, diced
- 30ml vegetable oil
- 500g premium Bethonga Beef mince
- 1 packet taco seasoning mix
- 1 jar taco salsa
- 12 taco shells
- 1 cup cheddar cheese, grated
- 1 cup lite sour cream
Cooking Instructions
- Heat oil and fry Bethonga Beef mince over high heat until browned. Add seasoning, salsa and 1 cup tomatoes and cook for 10 minutes.
- Add 1 cup pineapple pieces and remove from heat. Keep warm.
- Heat tacos according to manufacturer's instructions.
- Fill taco shells with beef, lettuce, remaining tomato and pineapple, and cheese and top with a dollop of sour cream.
