Char Grilled Strip Loin of Bethonga Beef with Bethonga Gold Pineapple and Feta Salad

Serves 6.
Prep Time: 15 minutes.
Cooking Time: 6 minutes.
Ingredients
- 2 cups Bethonga Gold pineapple, diced
- 4 lettuce leaf cups
- 1/2 lemon, juiced
- 1 cup corn kernels, cooked
- 100g feta cheese, cubed
- 15ml olive oil
- 6 x 200g Bethonga Beef strip loin steaks
- Reduced balsamic vinegar for drizzling
Cooking Instructions
- Combine pineapple, feta, corn, oil and juice in a bowl.
- Season beef with salt and pepper and char grill 3 minutes a side for medium rare.
- Place lettuce cups on plates, fill with salad and steak. Drizzle with reduced balsamic vinegar.
