Grilled Spiced Mango with Crispy Skinned Salmon
The rich, sweet nectar of the mango in this dish offers a new twist for this seafood favourite.
Serves 4.
Prep Time: 30 minutes.
Cooking Time: 20 minutes.
Ingredients
- 2 large mangoes (use Kensington Pride or Pearl mangoes)
- 4 salmon fillets (skin on, bones removed, 200g each)
- Spice mix
- Olive oil for frying
Spice Mix
- 1/4 tsp ground clove
- 1/2 tsp ground cinnamon
- 1 tsp ground mustard
- 1/4 tsp ground chilli powder
- 1 tsp ground ginger
- Pinch salt
Cooking Instructions
- Cut the mango cheeks off in a straight line with the skin on, so the mango will sit flat on the grill.
- With a small knife cut lines into the flesh of the mango in both directions, without piercing through to the skin.
- Sprinkle the mango with the spice mix and 1 tsp of olive oil. Rub the mango so it is evenly covered with the oil and spices.
- Heat a frypan or griddle pan over low heat until really hot.
- Add 2 tbsp olive oil and place mangoes, flesh side down in pan.
- Cook for 3 minutes, or until nicely browned.
- Turn mangoes and place into hot oven for 5 minutes.
- To cook the fish, rub the skin with some sea salt.
- Heat a frypan over low heat until really hot.
- Add 2 tbsp olive oil, heat, then add salmon, skin side down.
- Cook the fish for 5 minutes, or until the skin is a nice and crispy brown.
- Turn the fish and cook in the oven for 5 minutes.
- Serve the salmon and grilled mango with salad greens and vegetables.
