Mango Salsa with BBQ Scallops
This tasty salsa just screams summer when matched with these tender scallops.
Serves 4.
Prep Time: 30 minutes.
Cooking Time: 10 minutes.
Ingredients
- 1 cup coarsely chopped mango (try Kensington Pride, Keitt, Pearl or Sweetooth™ mangoes)
- 3 tbsp finely diced red onion
- 1 tsp finely sliced red chilli
- 3 tbsp roughly chopped fresh coriander
- 1/4 cup fresh lime or lemon juice
- Salt and pepper
- 5 or 6 scallops per person
Cooking Instructions
- Combine first six ingredients to make salsa.
- Lightly coat the scallops with oil.
- Cook the scallops on skewers on a BBQ.
- Serve with mango salsa.
