Mediterranean Style Veal Skewers Recipe

Mediterranean Style Veal Skewers
An easy and flavourful recipe prepared in no time!
Serves 8.
Prep Time: 15 minutes.
Cooking Time: 10 minutes.
Ingredients
- 1 bunch Treviso™ radicchio
- 2 bunches witlof
- 1 red onion, thinly sliced
- 250g veal, diced
- 16 large basil leaves (1/4 bunch)
- 1 chorizo, sliced
- 1/4 sourdough Vienna loaf, cut into 2-3cm cubes
- 125g haloumi cheese, cut into 8 cubes
- 1/4 cup olives
- 1/3 cup (60g) semi sundried tomatoes
- 135g jar tomato tapenade
- 1/4 cup Italian dressing
- 8 wooden skewers
Cooking Instructions
- Soak wooden skewers in cold water for 30 minutes.
- To make each skewer, skewer a piece of veal, a basil leaf, chorizo, haloumi, bread cube, olive, semi sundried tomato, diced veal, basil leaf, chorizo, and a cube of bread. Repeat until all ingredients are used.
- Brush with tomato tapenade. Spray oil onto a preheated chargriller or a non-stick frypan.
- Cook each side for 2 minutes, or until golden brown and cooked to your desire.
- Meanwhile, mix Treviso™ radicchio, witlof, and sliced red onion with the dressing.
- Serve skewers alongside salad.
