Minted Lamb and Soft-Dried The Original™ Grape Tomato Salad
The richness of perfectly done lamb partners the sweetness of The Original™ Grape Tomatoes in this wonderful salad.
Serves 4.
Prep Time: 15 minutes (plus marinating time).
Cooking Time: 7-10 minutes.
Ingredients
- 200g soft dried The Original™ Grape Tomatoes, drained
- 1 Sweet Gems™ baby cos lettuce heart
- 100ml olive oil
- 3 tbsp lemon juice
- 1 tbsp fresh thyme leaves
- 600g lamb fillet
- 200g feta cheese, crumbled or cubed
- 100g kalamata olives
- Handful fresh mint leaves
- Salt and black pepper
- Crusty bread, to serve (optional)
Cooking Instructions
- Combine 3 tbsp of the olive oil with 1 tbsp of lemon juice and the thyme leaves and season with salt and black pepper. Add the lamb fillet and leave to marinate for at least 30 minutes and up to 12 hours.
- Heat a frying pan, char-grill pan or BBQ to hot. Remove the lamb from the marinade allowing any excess marinade to drain off and cook for 3 minutes on each side for rare meat or until cooked to your liking.
- Remove from the pan, cover with foil and leave to rest for 10 minutes.
- Meanwhile, gently combine the grape tomatoes, feta, olives, mint and lettuce leaves in a serving dish. Thinly slice the lamb and arrange on top of the salad. Combine the remaining olive oil and lemon juice, season with salt and black pepper and drizzle over the salad.
