Oven Roasted The Original™ Grape Tomatoes and Mushrooms with Roast Lamb
Classic flavours - perfect with roast lamb.
Serves 4.
Prep Time: 30 minutes.
Cooking Time: 2 hours.
Ingredients
- 2 punnets The Original™ grape tomatoes
- 1-2 mushrooms per person, depending on the size
- 2 cloves garlic, cut into slivers
- 2 racks of lamb, cut in half
- 150ml olive oil
- 50ml balsamic vinegar
- Picked fresh herbs - oregano, marjoram, rosemary or basil are suitable
- Salt and pepper to taste
Cooking Instructions
- Preheat oven to 100°C.
- Place the tomatoes and mushrooms in a baking tray.
- Sprinkle with picked herbs, garlic, oil and vinegar and salt and pepper.
- Place in an oven and slowly roast for 2 hours, or until vegetables are tender but maintaining firmness. Keep them warm.
- Rub oil, salt, pepper and herbs into the lamb and bake at 200°C for 15-20 minutes, depending on rareness of meat desired.
