Mediterranean Vegetable Pasta Salad
A delicious and nutritious pasta salad suitable for brunch, lunch, or dinner.
Serves: 4-6
Prep Time: 10 minutes.
Cooking Time: 15 minutes.
Ingredients
- 1 bunch Broccolini® baby broccoli, cut into 4cm lengths
- 1 bunch Tuscan cabbage (cavolo nero), roughly shredded
- 2 tomatoes, cut into wedges
- 200g The Original™ grape tomatoes, halved
- 1 tbsp olive oil
- 1 red onion, sliced
- 2 cloves garlic, chopped
- 2 tbsp parsley, chopped
- 1/2 cup Italian dressing
- 375g fresh fettuccine, cut into shorter lengths
Cooking Instructions
- Cook pasta in a large pot of boiling water for 3-5 minutes, or until al dente. Drain.
- Heat oil in the same pot, over medium heat. Cook the onion and garlic for 2 minutes or until softened. Add the Broccolini® and stir for a further minute, then add the Tuscan cabbage (cavolo nero) and cook for another 2 minutes or until wilted.
- Toss the pasta together with the vegetable mixture. Add the tomatoes, grape tomatoes, dressing, and parsley.
