Pasta with Piccolini® Cocktail Tomatoes, Salami and Spinach
This fresh pasta dish is healthy, easy to prepare and tastes sensational!
Serves 4.
Prep Time: 10 minutes.
Cooking Time: 15 minutes.
Ingredients
- 2 x 250g punnets Piccolini® cocktail tomatoes
- 100g rocket leaves
- 180g ricotta
- 3 tbsp lemon juice
- 2 tbsp finely chopped basil
- Salt and freshly ground black pepper
- 3 tbsp olive oil
Cooking Instructions
- Cook the pasta according to packet instructions, reserving 2 tbsp of the cooking liquid.
- Meanwhile, heat the olive oil in a frying pan over medium heat. Add the onion and garlic and fry gently for 5 minutes. Increase the heat, add the salami and cook for 4-5 minutes.
- Add the halved tomatoes and cook for about 2 minutes until just starting to collapse. Stir in the spinach leaves and reserved pasta cooking liquid and cook until just wilted.
- Season with salt and pepper. Toss through the pasta and serve immediately.
