The Original™ Grape Tomato Pasta with Olives, Capers and Smoked Fish

Serves 4 (as an entrée).
Prep Time: 30 minutes.
Cooking Time: 15 minutes.

 

Ingredients

  • 2 punnets The Original™ grape tomatoes
  • 1 spring onion, sliced diagonally
  • 2 cloves garlic, crushed
  • 200g hot smoked salmon
  • 250g pasta
  • 50g salted baby capers, rinsed
  • 100g pitted Kalamata olives
  • Juice of one lemon
  • 1 tbsp chopped dill
  • 200ml olive oil
  • Salt and pepper to taste

Cooking Instructions

  • Sauté garlic in olive oil, add lemon juice, capers, salt and pepper.
  • When hot, add the tomatoes until they become hot and tender but not breaking up.
  • Add the onion, fish and olives to warm through, stirring gently so that they don't break up too much.
  • Add salt and pepper to taste and add the dill.
  • Toss through hot pasta cooked to al dente, adding a little more oil if necessary.
