The Original™ Grape Tomato Pasta with Olives, Capers and Smoked Fish
Taste the sea with the smoky, salty flavours in this dish.
Serves 4 (as an entrée).
Prep Time: 30 minutes.
Cooking Time: 15 minutes.
Ingredients
- 2 punnets The Original™ grape tomatoes
- 1 spring onion, sliced diagonally
- 2 cloves garlic, crushed
- 200g hot smoked salmon
- 250g pasta
- 50g salted baby capers, rinsed
- 100g pitted Kalamata olives
- Juice of one lemon
- 1 tbsp chopped dill
- 200ml olive oil
- Salt and pepper to taste
Cooking Instructions
- Sauté garlic in olive oil, add lemon juice, capers, salt and pepper.
- When hot, add the tomatoes until they become hot and tender but not breaking up.
- Add the onion, fish and olives to warm through, stirring gently so that they don't break up too much.
- Add salt and pepper to taste and add the dill.
- Toss through hot pasta cooked to al dente, adding a little more oil if necessary.
