Artisan® Grilled Vegetable Salad
A hearty salad served with an aromatic vinaigrette made with lemon juice and fresh herbs.
Serves 4.
Prep Time: 25 minutes.
Ingredients
- 3 red, yellow or orange bell capsicums, quartered
- 1 small onion, quartered
- 2 heads Artisan® lettuce
- 12 cherry-size mozzarella cheese balls or 2.5cm mozzarella cheese cubes
Lemon Herb Vinaigrette
- 2 tbsp cider vinegar
- 4 tsp chopped fresh basil
- 4 tsp fresh lemon juice
- 2 tsp minced garlic
- 1-1 1/2 tsp minced fresh thyme
- 1/2 tsp Dijon mustard
- 1/4 tsp salt
- 1/3 cup olive oil
Cooking Instructions
- Prepare vinaigrette by combining vinegar, basil, lemon juice, garlic, thyme, mustard and salt in a bowl. Gradually whisk in oil until blended. Cover and store in the refrigerator.
- Toss capsicums and onion with 2 tbsp vinaigrette in a large bowl. Grill over a medium heat until tender (about 10 minutes) turning occasionally.
- Cut core end of lettuce to release leaves; cut leaves cross-wise in half. Rinse and drain well.
- Arrange lettuce and vegetables on a plate. Top with mozzarella cheese. Add vinaigrette as desired before serving and toss well.
