Artisan® Grilled Vegetable Salad

Artisan® Grilled Vegetable Salad

 

A hearty salad served with an aromatic vinaigrette made with lemon juice and fresh herbs.

 

Serves 4.
Prep Time: 25 minutes.

 

Ingredients

  • 3 red, yellow or orange bell capsicums, quartered
  • 1 small onion, quartered
  • 2 heads Artisan® lettuce
  • 12 cherry-size mozzarella cheese balls or 2.5cm mozzarella cheese cubes

Lemon Herb Vinaigrette

  • 2 tbsp cider vinegar
  • 4 tsp chopped fresh basil
  • 4 tsp fresh lemon juice
  • 2 tsp minced garlic
  • 1-1 1/2 tsp minced fresh thyme
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/3 cup olive oil

Cooking Instructions

  • Prepare vinaigrette by combining vinegar, basil, lemon juice, garlic, thyme, mustard and salt in a bowl. Gradually whisk in oil until blended. Cover and store in the refrigerator.
  • Toss capsicums and onion with 2 tbsp vinaigrette in a large bowl. Grill over a medium heat until tender (about 10 minutes) turning occasionally.
  • Cut core end of lettuce to release leaves; cut leaves cross-wise in half. Rinse and drain well.
  • Arrange lettuce and vegetables on a plate. Top with mozzarella cheese. Add vinaigrette as desired before serving and toss well.
