Blushing Petite Oak Salad
This colourful salad with goat's cheese has a tangy twist.
Serves 6-8.
Prep Time: 20 minutes.
Preparation Only
Ingredients
- 1 packet Artisan® lettuce
- 2 medium red grapefruits, sectioned
- 1 avocado, thinly sliced
- 115g goat's cheese, crumbled
- 1/3 cup fresh pomegranate seeds
- 1/4 cup chopped fresh chives
- 1/4 cup chopped toasted pecans
Dressing
- 1/3 cup fresh grapefruit juice
- 2 tbsp honey
- 1 tsp Dijon mustard
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2/3 cup extra virgin olive oil
Preparation Instructions
- Cut core end of lettuce to release leaves; cut leaves cross-wise in half. Rinse and drain well.
- Combine lettuce, grapefruit, avocado, goat cheese, pomegranate seeds, chives and pecans in a large bowl.
- To make dressing, combine grapefruit juice, honey, mustard, salt and pepper in a separate bowl.
- Gradually whisk in oil until blended.
- Cover and store in refrigerator.
- Add dressing to salad ingredients as desired before serving.
