Crunchy Baby Wombok and Noodle Salad

Crunchy Baby Wombok and Noodle Salad

 

An Asian-inspired salad with noodles and slivered almonds for a delicious crunchy texture.

 

Serves: 6.
Prep Time: 15 minutes.

 

Preparation Only

 

Ingredients

  • 100g packet fried Chinese noodles
  • 1/2-1 shredded baby wombok
  • 6 shallots
  • 100g slivered almonds

Dressing

  • 1/2 cup caster sugar
  • 1/4 cup white vinegar
  • 1 tbsp soy sauce
  • 1/4 cup olive oil
  • 2 tbsp sesame oil

Preparation Instructions

  • Shred the baby wombok, wash and drain well.
  • Mix all the dressing ingredients in a bowl and stir well until the sugar is dissolved.
  • Combine the baby wombok, chopped shallots, almonds and noodles.
  • Stir through dressing when ready to serve.
