Diabetes Friendly Midnight Beauty® Seedless Black Grapes Salad

Ingredients
- 2 cups Midnight Beauty® seedless black grapes
- 2 red Vine Sweet Minicaps® baby capsicums, finely sliced
- Zest and juice 1 lemon
- 1/2 Spanish onion
- 1/8th tsp cayenne pepper
- 2 tbsp olive oil
- 400g lean rump, sirloin or eye fillet, trimmed of fat
- 1 tbsp sumac
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 400g can chickpeas, rinsed under running water
- 1/2 bunch flat-leaf parsley
Cooking Instructions
- Cut the grapes in half and place in a bowl with cayenne pepper, lemon zest and juice and half the olive oil. Put to one side.
- Cut the steak into 5mm thick slices and place in a bowl. Sprinkle over sumac, cumin and coriander. Season with salt and pepper. Gently massage the spices into beef, until the pieces are well covered.
- Drain the chickpeas and place them in a serving bowl. Thinly slice the onion and pick the parsley leaves off the stalks. Add these to chickpeas.
- Place a large non-stick frying pan over a medium-high heat. Pour in the rest of the olive oil and once hot but not smoking, add the spiced beef. Cook for 1 minute on each side, until the pieces are browned and just cooked through.
- Add the hot beef to the chickpeas and toss together. Pour the grapes and their marinade over the top. Sprinkle diced baby capsicum over the top and serve.
