Enchanted® Apple, Pecan and Pancetta Salad with Creamy Lemon Dressing
A delightfully light and different salad, perfect for lazy weekend lunches.
Serves 4.
Prep Time: 15 minutes.
Cooking Time: 2 minutes.
Ingredients
- 4 Enchanted® apples, skin left on, sliced thinly
- 1 Treviso™ radicchio, washed
- 2 witlof, separated
- 1 medium carrot, julienned
- 2 stalks celery, thinly sliced
- 6-8 slices pancetta, sliced
- 1/2 cup pecan halves, toasted and roughly chopped
- 2 tbsp chives, chopped
- 1/3 cup shaved parmesan
Dressing
- 1/2 cup whole egg mayonnaise
- 1 garlic clove, chopped
- 1 1/2 tbsp lemon juiice
- Zest of 1 lemon
- Salt and pepper, to taste
Cooking Instructions
- Heat a non stick frypan over medium heat and spray a little oil
- Cook pancetta for 3-4 minutes or until browned and crisp. Drain on paper towel.
- In a medium bowl, combine apple slices, radicchio, witlof, carrot, and celery.
- Divide onto 4 serving plates and sprinkle with pecans, pancetta and chives.
- Top with shaved parmesan.
Dressing Instructions
- Combine ingredients into a small jug, adding a little water to thin down if too thick. (Dressing needs to be thin enough to drizzle).
- Season to taste.
- Drizzle over salad, and serve immediately.
