Enchanted® Apple, Pecan and Pancetta Salad with Creamy Lemon Dressing

Enchanted® Apple, Pecan and Pancetta Salad with Creamy Lemon Dressing

 

A delightfully light and different salad, perfect for lazy weekend lunches. 

 

Serves 4.
Prep Time: 15 minutes.
Cooking Time: 2 minutes.

 

Ingredients

  • 4 Enchanted® apples, skin left on, sliced thinly
  • 1 Treviso™ radicchio, washed
  • 2 witlof, separated
  • 1 medium carrot, julienned
  • 2 stalks celery, thinly sliced
  • 6-8 slices pancetta, sliced
  • 1/2 cup pecan halves, toasted and roughly chopped
  • 2 tbsp chives, chopped
  • 1/3 cup shaved parmesan

  Dressing

  • 1/2 cup whole egg mayonnaise
  • 1 garlic clove, chopped
  • 1 1/2 tbsp lemon juiice
  • Zest of 1 lemon
  • Salt and pepper, to taste

Cooking Instructions

  • Heat a non stick frypan over medium heat and spray a little oil
  • Cook pancetta for 3-4 minutes or until browned and crisp. Drain on paper towel.
  • In a medium bowl, combine apple slices, radicchio, witlof, carrot, and celery. 
  • Divide onto 4 serving plates and sprinkle with pecans, pancetta and chives.
  • Top with shaved parmesan.

Dressing Instructions

  • Combine ingredients into a small jug, adding a little water to thin down if too thick. (Dressing needs to be thin enough to drizzle).
  • Season to taste. 
  • Drizzle over salad, and serve immediately.
