Fresh Sweet Gems™ Baby Cos Lettuce Hearts Nicoise Salad
Created especially for Perfection Fresh by celebrity cook, Stefano de Pieri, of the Mildura Grand Hotel's Stefano's Restaurant.

Ingredients
- 2 Sweet Gems™ baby cos lettuce hearts, cut into bite-size pieces
- 1 cup green beans, blanched and cut into small pieces
- 2 tbsp small black olives
- 3 small boiled potatoes with the skin removed and sliced
- 2 tbsp flat parsley
- 1 x 185g can of tuna in olive oil
- 2 boiled eggs, quartered
- Olive oil
- Lemon juice
- Anchovies (optional)
Preparation Instructions
- Toss all ingredients together with olive oil, salt and pepper and lemon juice.
