German Cabbage Salad

German Cabbage Salad

 

A terrific refreshing salad. 

 

Serves 6-8.
Prep Time: 24 hours approx (incl. cabbage preparation).

 

Preparation Only

 

Ingredients

  • 1 Minicab® baby cabbage
  • 1 Granny Smith apple
  • 1/2 red onion
  • 1/4 bunch continental parsley
  • Lemon
  • 100g table salt
  • 2 tbsp tarragon vinegar
  • 4 tbsp olive oil

Preparation Instructions

  • Remove core and outer leaves of cabbage.
  • Slice remainder of cabbage finely, lay out on tray and mix in salt. Place in fridge overnight to soften the cabbage.
  • The next day wash the cabbage in cold water and allow to soak for 15 minutes to remove salt.
  • Taste test to ensure salt is washed off. Squeeze dry cabbage. It is now ready to use.
  • Slice apple, onion, and chop parsley.
  • Mix with cabbage in a bowl.
  • Add lemon juice, tarragon vinegar and olive oil, pepper and a little salt if required.
  • Toss together and serve immediately.
