German Cabbage Salad Recipe

German Cabbage Salad
A terrific refreshing salad.
Serves 6-8.
Prep Time: 24 hours approx (incl. cabbage preparation).

Ingredients
- 1 Minicab® baby cabbage
- 1 Granny Smith apple
- 1/2 red onion
- 1/4 bunch continental parsley
- Lemon
- 100g table salt
- 2 tbsp tarragon vinegar
- 4 tbsp olive oil
Preparation Instructions
- Remove core and outer leaves of cabbage.
- Slice remainder of cabbage finely, lay out on tray and mix in salt. Place in fridge overnight to soften the cabbage.
- The next day wash the cabbage in cold water and allow to soak for 15 minutes to remove salt.
- Taste test to ensure salt is washed off. Squeeze dry cabbage. It is now ready to use.
- Slice apple, onion, and chop parsley.
- Mix with cabbage in a bowl.
- Add lemon juice, tarragon vinegar and olive oil, pepper and a little salt if required.
- Toss together and serve immediately.
