Greek Salad with a Twist
The name says it all - this healthy salad makes a delicious light lunch.
Serves 4 as a main or 6 as an accompaniment.
Prep Time: 20 minutes.

Ingredients
- 1/2 Sweet Gems™ baby cos lettuce heart, leaves torn
- 1 green capsicum, seeds and membrane removed, sliced
- 1 fennel bulb, thinly sliced
- 1 small red onion, thinly sliced
- 1 Lebanese cucumber, cut into chunks
- 200g punnet The Original™ golden grape tomatoes, halved
- 100g semi dried tomatoes, roughly chopped
- 250g feta, crumbled
- 100g (2/3 cup) pitted kalamata olives
- 1 tbsp fresh oregano leaves
- 4 tbsp extra virgin olive oil
- 2 tbsp lemon juice
Preparation Instructions
- Put the Sweet Gems™ baby cos lettuce heart, capsicum, fennel, red onion, cucumber and The Original™ golden grape tomatoes in a bowl.
- Combine the olive oil and lemon juice and season well with salt and freshly ground black pepper.
- Pour over the salad and toss gently.
- Scatter over the feta, olives and oregano leaves.
