Healthy Indian Potato Salad with Royal Pom® Pomegranate and Mint
A delicious, spiced potato salad.
Serves: 4 as a side.
Prep Time: 10 minutes.
Cooking Time: 15 minutes.
Ingredients
- 3 large potatoes, boiled and peeled
- 1 cup fresh Royal Pom® pomegranate arils
- 1/2 red onion, thinly sliced
- 1/2 tsp chaat masala
- Pinch black pepper
- 1 squeeze fresh lemon juice
- 1 tsp roasted cumin powder
- 1/2 tsp red chilli powder
- Oil for frying
- 1 1/2 tbsp coriander mint chutney
- Mint leaves, chopped
- Salt to taste
Cooking Instructions
- To remove pomegranate arils use a sharp knife, cut off the pomegranate crown, then cut the pomegranate into even sections. Immerse the sections in a bowl of cold water and gently roll out the arils with your fingers or a spoon. Discard everything else and strain the water.
- Chop the boiled potatoes into small cubes.
- Deep-fry potatoes in oil in a wok till golden brown and well cooked.
- Drain excess oil onto a paper towel.
- Put fried potatoes in a bowl with cumin powder, red chilli powder, salt, chaat masala, black pepper and mix thoroughly. Squeeze fresh lemon juice over the mixture. Add red onion and pomegranate arils. Mix together.
- Place the coriander mint chutney into a side dish and spoon over potato salad to taste.
- Garnish with fresh mint leaves and serve.
