Mango, Rocket, Roast Beetroot and Chicken Salad
Cool, colourful and refreshing … this combination is an all-round winner.
Serves 4.
Prep Time: 40 minutes.
Cooking Time: 10 minutes.
Ingredients
- 1 large mango, peeled and sliced (use Kensington Pride or Pearl mango)
- 50g fresh rocket leaves
- 2 medium beetroot, tossed in oil and roasted, then cooled
- 2 chicken breasts, browned in a pan then cooked in hot oven for 8 minutes, then cooled
- 1 tsp tahini sauce
- Juice of 1 orange
- Salt and pepper
Cooking Instructions
- Slice the cooled chicken breast and toss with rocket, mango slices and beetroot wedges.
- Make a dressing of 1 tsp tahini and juice of 1 orange.
- Shake in a jar with salt and pepper and pour over salad.
