Orange, Fennel and Olive Salad
This wonderfully fresh and light salad is a perfect accompaniment to any meal.
Serves 4.

Ingredients
- 1 bunch baby endive, washed, and separated
- 2 baby fennel, thinly sliced
- 1 Treviso™ radicchio, washed and torn
- 1 Sweet Gems™ baby cos lettuce heart, washed and torn
- 3 large navel oranges, segmented
- 1 small red onion, thinly sliced
- 1/2 cup balsamic and garlic dressing
- 20 whole kalamata olives
Preparation Instructions
- Place the baby endive, fennel, Treviso™ radicchio, Sweet Gems™ baby cos lettuce heart, orange segments, red onion, and olives in a large bowl.
- Drizzle over the dressing and toss gently.
- Serve.
